12-13 soft flour 6-inch tortillas
2 lbs. Ground beef
2 packets taco seasoning
2 c chopped tomatoes
1 c chopped red onion
1/2 c chopped green onion chopped
1/4 c chopped jalapeño optional
kosher salt to taste
2 c heavy whipping cream
1/2 stick butter
3 cups taco cheese or shredded
Mexican cheese
1.5 teaspoons Cajun spice
sour cream garnish
chopped green onion garnish
INSTRUCTIONS
In a small bowl, combine red onion, green onion, jalapeño pepper, tomatoes, and salt to taste. Set aside. Fry the meat in a large pan and drain the fat. Add taco seasoning and stir. Boil the cream and butter in a medium-sized pot, stirring until thickened. Remove from heat and add 2 cups of cheese. Add Cajun seasoning and keep warm.
In a 9 x 13 casserole, layer 4 tortillas (cut to fit in the bottom of the casserole), ground beef, cheese, and tomato mixture. Repeat until you have 3 layers, ending with cheese sauce on top. Add the last cup of cheese over the entire casserole.
Place in a 400-degree oven, covered, for 20 minutes, then remove and let cool. Garnish each serving with sour cream and green onions. Say grace and enjoy
